Spring Chicken And Cress Salad

Lemon, mint, chilli, ginger and watercress bring zesty flavours to this salad.


  • 1 smoked chicken
  • 250 grams cherry tomatoes, halved
  • 2-3 tsp minced fresh ginger
  • 1 tsp minced fresh garlic
  • 1 tsp minced red chilli
  • 6-8 basil leaves
  • 2 tblsp chopped fresh mint
  • grated rind and juice 1 lemon
  • 2 tblsp cider or white wine vinegar
  • 4 tblsp olive oil
  • 2 avocados, stoned, peeled and sliced
  • 1 small red onion, peeled and finely sliced
  • 3-4 cup watercress leaves
  • unsweetened yoghurt to accompany (optional)


  1. Break the chicken into small bite size pieces, discarding the skin and bones and place in a bowl with the cherry tomatoes.
  2. Mix together the ginger, garlic, chilli, basil, mint, lemon juice, vinegar and olive oil and toss with the chicken. Cover and stand for 30 minutes.
  3. Add the sliced avocados, red onion and watercress and toss gently. Serve in bowls soon after making drizzled with yoghurt if wished
