Spicy Thai pork salad

Ingredients

  • 500 grams lean pork mince
  • 2 teaspoons minced garlic
  • ¼ cup Thai red or green curry paste
  • 3-4 tablespoons Indonesian sweet soy sauce
  • 2 tablespoons fish sauce
  • Salad
  • 1 mango, sliced
  • 1 carrot
  • ½ cucumber, halved and sliced
  • 2-3 stalks celery, sliced
  • ¼-½ red onion, finely sliced
  • ½ cup peanuts, roasted
  • 2 chillies, deseeded and sliced
  • 2 cups fresh salad leaves
  • ¼ cup chopped coriander, chives and/or basil
  • 1 cup plain vinaigrette
  • grated rind one lime
  • 1 teaspoon fish sauce

Method

  1. Mix together the pork mince, garlic, curry paste, soy sauce and fish sauce. Mould into small patties.
  2. Heat 2-3 tablespoons oil in a frying pan and cook the patties over a low heat for 6-8 minutes, turning once until golden and cooked. Set aside.
  3. In a bowl toss together the mango, carrot, cucumber, celery, red onion, peanuts, chilli with fresh salad leaves and toss with the vinaigrette lime juice and fish sauce.
  4. Arrange the salad on plates, top with warm patties and serve.

Cooks Tips

- When mangoes are out of season use a 400 gram can or alternatively try sliced paw paw.
