
Ingredients
- 500 grams lean pork mince
- 2 teaspoons minced garlic
- ¼ cup Thai red or green curry paste
- 3-4 tablespoons Indonesian sweet soy sauce
- 2 tablespoons fish sauce
- Salad
- 1 mango, sliced
- 1 carrot
- ½ cucumber, halved and sliced
- 2-3 stalks celery, sliced
- ¼-½ red onion, finely sliced
- ½ cup peanuts, roasted
- 2 chillies, deseeded and sliced
- 2 cups fresh salad leaves
- ¼ cup chopped coriander, chives and/or basil
- 1 cup plain vinaigrette
- grated rind one lime
- 1 teaspoon fish sauce
Method
- Mix together the pork mince, garlic, curry paste, soy sauce and fish sauce. Mould into small patties.
- Heat 2-3 tablespoons oil in a frying pan and cook the patties over a low heat for 6-8 minutes, turning once until golden and cooked. Set aside.
- In a bowl toss together the mango, carrot, cucumber, celery, red onion, peanuts, chilli with fresh salad leaves and toss with the vinaigrette lime juice and fish sauce.
- Arrange the salad on plates, top with warm patties and serve.
Cooks Tips
- When mangoes are out of season use a 400 gram can or alternatively try sliced paw paw.
