Spicy Thai Marinade

Spicy Thai Marinade

Ideal with fish, chicken or pork.


  • 1 teaspoon grated fresh ginger
  • 1 teaspoon minced chilli or sambal oelek
  • 1-2 teaspoons chopped fresh mint
  • 1 tablespoon chopped fresh coriander
  • 1 tablespoon chopped fresh lemongrass
  • 2 teaspoons grated palm sugar
  • 1 tablespoon olive oil
  • 2 tablespoons each lemon juice and Thai fish sauce


  1. Mix together the ginger, chilli, mint, coriander, lemongrass, palm sugar, olive oil, lemon juice and fish sauce.
  2. Toss through the chosen meat or fish in the marinade in a resealable bag or turn in a non-metallic dish. Cover and marinate as required. For fish allow 45 minutes in the refrigerator, for other meats, allow 2-3 hours in the refrigerator.
