Ingredients
- 300 grams green prawns, shelled weight
- 6 eggs
- 4 spring onions, trimmed and finely chopped
- 1 cup finely chopped mushrooms
- 1 tsp minced fresh ginger
- ½ tsp each salt and pepper
- 2 tblsp finely chopped coriander
Method
- Finely chop or mince the prawns.
- In a bowl beat together the prawns, eggs, spring onions, mushrooms, ginger, salt, pepper and coriander until well mixed.
- Heat a dash oil in a frying pan and cook large spoonfuls of the mixture over a moderately high heat for 4-5 minutes, turning once during cooking. Serve the fritters with plum or chilli sauce.
