Ingredients
- 600 grams medium-sized new potatoes, scrubbed
- 2 tablespoons butter
- 2 teaspoons garam masala
- ½ teaspoon lemon rind
- ½ teaspoon salt
- ½ teaspoon pepper
Roasted garlic dressing
- 1 bulb garlic
- 250 grams light sour cream
- ¼ teaspoon salt
- 2 tablespoon each chopped chives and parsley
Method
- Cook the potatoes. Cool, drain and cut the larger ones in half.
- Heat the butter in a large pan. Add the garam masala, lemon rind, salt and pepper. Add the potatoes and cook over a medium heat, tossing, until the potatoes are slightly browned and well flavoured. Serve warm or cold with Roasted Garlic Dressing.
Roasted Garlic Dressing
- Wrap garlic bulb in tin foil and bake at 180ºC for an hour or until it's well cooked. Cool.
- Cut the garlic bulb in half horizontally and squeeze the pulp into a food processor. Add the sour cream and salt and process until smooth. Pulse in the chives and parsley.
