Ingredients
- 2 tblsp finely chopped parsley
- 2 tsp Tabasco sauce
- 1 spring onion, finely chopped
- olive oil for cooking
- 1/2 tsp each dried basil, thyme and ground black pepper
- 4 sundried red tomatoes in oil, finely diced
- 2 tblsp tomato sauce or puree
- 1/2 lemon (juice of)
- 6 hapuka (groper) steaks
Method
- Mix together the dried herbs and pepper, parsley, sundried tomatoes, Tabasco and tomato sauces, lemon juice and spring onion.
- Rub over one side of the fish steaks. Place in a large dish and set aside for 1 hour before cooking.
- Heat the barbecue to moderately hot and brush the hot plate liberally with olive oil. Place the fish steaks, topping side down, onto the hot plate and cook for 3-4 minutes. Turn and cook the other side for 3-4 minutes until cooked to your liking. Cooking time will vary depending on the thickness of the fish. Do not over-cook fish as it is much better a fraction underdone.
