Spicy BBQ Fish


  • 2 tblsp finely chopped parsley
  • 2 tsp Tabasco sauce
  • 1 spring onion, finely chopped
  • olive oil for cooking
  • 1/2 tsp each dried basil, thyme and ground black pepper
  • 4 sundried red tomatoes in oil, finely diced
  • 2 tblsp tomato sauce or puree
  • 1/2 lemon (juice of)
  • 6 hapuka (groper) steaks


  1. Mix together the dried herbs and pepper, parsley, sundried tomatoes, Tabasco and tomato sauces, lemon juice and spring onion.
  2. Rub over one side of the fish steaks. Place in a large dish and set aside for 1 hour before cooking.
  3. Heat the barbecue to moderately hot and brush the hot plate liberally with olive oil. Place the fish steaks, topping side down, onto the hot plate and cook for 3-4 minutes. Turn and cook the other side for 3-4 minutes until cooked to your liking. Cooking time will vary depending on the thickness of the fish. Do not over-cook fish as it is much better a fraction underdone.
