Great for brunch, these tomatoes can be cooked in advance and then warmed in a low oven when required.
Ingredients
- 12-16 medium-sized tomatoes
- 1 tblsp caster sugar
- 2-3 tsp crushed salt flakes
- freshly ground black pepper
- 2-3 tsp ground sumac
- ¼ cup olive oil
Method
- Halve the tomatoes and place in a lasagne-style dish. Sprinkle over the sugar, salt flakes, pepper and sumac.
- Drizzle with the olive oil.
- Roast at 140ºC for 1½ hours until slightly shrunken, but not burnt or dried.
- Serve the tomatoes on warmed Turkish bread with crumbled feta cheese and chopped fresh mint. Drizzle on extra olive oil if wished.
