Spiced Slow-Roasted Tomatoes On Turkish Bread

Great for brunch, these tomatoes can be cooked in advance and then warmed in a low oven when required.


  • 12-16 medium-sized tomatoes
  • 1 tblsp caster sugar
  • 2-3 tsp crushed salt flakes
  • freshly ground black pepper
  • 2-3 tsp ground sumac
  • ¼ cup olive oil


  1. Halve the tomatoes and place in a lasagne-style dish. Sprinkle over the sugar, salt flakes, pepper and sumac.
  2. Drizzle with the olive oil.
  3. Roast at 140ºC for 1½ hours until slightly shrunken, but not burnt or dried.
  4. Serve the tomatoes on warmed Turkish bread with crumbled feta cheese and chopped fresh mint. Drizzle on extra olive oil if wished.
