This is enjoyed regularly in my home.
Ingredients
- 500 grams lean beef mince
- 1 red onion, peeled and finely chopped
- 1-2 teaspoons minced garlic
- 2-3 teaspoons curry powder or curry paste
- 2 tablespoons chopped fresh chives or thyme
- 1 cup fresh breadcrumbs, white or wholemeal
- 2 eggs, beaten
- ¼ cup Worcestershire sauce
- 1 400-gram can Indian-style tomatoes
- ½ cup beef stock
Method
- Preheat the oven to 180ºC.
- In a large bowl, mix together the beef mince, onion, garlic, curry powder, chives, breadcrumbs, eggs, half the Worcestershire sauce and half the tomatoes.
- Using wet hands shape the mixture into a loaf shape and place in a 6 cup capacity lasagne-style dish.
- Stir together the beef stock with the remaining tomatoes and Worcestershire sauce. Pour over the loaf.
- Bake meatloaf in a preheated oven for 60 minutes. Cover and rest 5 minutes before carving into thick slices. Serve with mashed potatoes and vegetables.
