Spiced Meatloaf

Spiced Meatloaf

This is enjoyed regularly in my home.


  • 500 grams lean beef mince
  • 1 red onion, peeled and finely chopped
  • 1-2 teaspoons minced garlic
  • 2-3 teaspoons curry powder or curry paste
  • 2 tablespoons chopped fresh chives or thyme
  • 1 cup fresh breadcrumbs, white or wholemeal
  • 2 eggs, beaten
  • ¼ cup Worcestershire sauce
  • 1 400-gram can Indian-style tomatoes
  • ½ cup beef stock


  1. Preheat the oven to 180ºC.
  2. In a large bowl, mix together the beef mince, onion, garlic, curry powder, chives, breadcrumbs, eggs, half the Worcestershire sauce and half the tomatoes.
  3. Using wet hands shape the mixture into a loaf shape and place in a 6 cup capacity lasagne-style dish.
  4. Stir together the beef stock with the remaining tomatoes and Worcestershire sauce. Pour over the loaf.
  5. Bake meatloaf in a preheated oven for 60 minutes. Cover and rest 5 minutes before carving into thick slices. Serve with mashed potatoes and vegetables.
