Spearmint And Lime Scented Fruit Salad

The sharpness of the lime marries well with the spearmint and fruit.


  • 8 plums or apricots or 4 peaches or nectarines
  • 2 cups raspberries or blueberries
  • 1 cup water
  • ½ cup sugar
  • grated rind and juice of 2 limes
  • 2 tblsp chopped fresh mint leaves (spearmint is nice here)


  1. Place the whole stone fruit into a large bowl and pour over sufficient boiling water to cover. Stand 5-8 minutes until the skin splits and then refresh in ice-cold water. Peel away the skin.
  2. Heat together the water, sugar, lime rind and juice, stirring continuously until the sugar dissolves then simmer 2 minutes. Cool.
  3. Pour the cooled syrup over the stone fruit and berries and sprinkle with the spearmint. Cover and allow to macerate for 30 minutes to one hour before serving with sweetened whipped cream or mascarpone.
