This is Spanish food at its simplest but it's undeniably delicious.
Ingredients
- 12 small juicy vine tomatoes
- 6 cloves garlic
- 1 crusty loaf bread
- olive oil or garlic butter
- 2-3 roasted peppers
- 6-8 anchovy fillets, cut into 1 cm pieces
- 8-12 olives stuffed green or black
- Extra virgin olive oil, to serve with
Method
- Cut criss-crosses into tops of tomatoes to stop skins breaking up.
- Place tomatoes and garlic on a foil lined tray and roast at 200ÂșC for 8 to 10 minutes.
- Cut bread into 2 cm thick slices and brush liberally with olive oil or garlic butter. Barbecue over or grill under a high heat.
- Place roasted tomatoes, garlic, and peppers on bread, season with salt and pepper.
- Scatter over olives and anchovies, drizzle with extra olive oil.
Cooks Tips
- Look for Spanish olives and olive oil. - Roasted peppers can be purchased from the deli section of your supermarket. Alternatively, to prepare them yourself, halve and deseed 2 peppers. Place cut side down on a foil-lined tray and grill until blackened. Cool and then peel.
