Sour Cream Banana Cake

Sour Cream Banana Cake

This beautifully moist cake has a rather rich but delicious frosting.

Ingredients

  • 175 grams butter, softened
  • 1 cup caster sugar
  • 2 eggs, lightly beaten
  • 1 tsp vanilla essence
  • 3 large bananas, well mashed (about 1 ½ cups)
  • 2 cups flour
  • 1 tsp baking soda
  • 6 tblsp sour cream

Cream Cheese Icing

  • 250 gram tub cream cheese
  • 75 cream grams butter, softened
  • 2¼ cups icing sugar
  • 1 tsp vanilla essence

Method

  1. Beat the butter and sugar together until light and fluffy. Add the eggs one at a time and beat well. Beat in the vanilla essence and mashed bananas.
  2. Sift the flour and baking soda together and stir into the cream mixture gently with the sour cream.
  3. Divide the mixture between 2 well-greased and paper-lined 23 cm cake tins.Bake at 180 degrees Celsius for 20-25 minutes until cooked. The cake will have shrunk from the sides of the tin or when a skewer is inserted incomes out clean. Remove from the oven and stand 10 minute before turning onto a cake rack to cool.
  4. When cold layer with the cream cheese icing and decorate with chocolate chips or passion fruit pulp.

Cream Cheese Icing

  1. Beat the cream cheese and butter together until light and fluffy. Beat in the sifted icing sugar and flavour with the vanilla essence.
