Soubise (onion) Sauce

Soubise (onion) Sauce

Ideal with corned beef, or to as a base for a fish or smoked fish pie.

Ingredients

  • 1 quantity basic white sauce
  • 1 large onion, peeled and very finely chopped
  • 50 grams butter
  • ¼ cup cream (optional)

Method

  1. Make the basic white sauce according to recipe on this website.
  2. Cook the onion in the butter over a low heat for about 15 minutes stirring occasionally until the onion is very very tender.
  3. Add the onion and butter to the warm béchamel (white) sauce and heat through. Finish with the cream if using. If wished, strain before seasoning with salt and white pepper.
