Smoked Chicken And Herb Salad

This is an easy, healthy salad - perfect for Friday night when you want to start relaxing.

Ingredients

  • 1 boneless smoked chicken breast, skin removed
  • 1 small cucumber or ½ long cucumber
  • 2 nectraines or peaches, halved and stoned
  • 150 grams sugar snap or mangetout peas
  • 4 cups salad mix
  • 2 spring onions, trimmed
  • about 8-12 cherry tomatoes, halved
  • grated rind and juice one lemon or 2 limes
  • 2 tblsp sweet chilli sauce
  • 4 tblsp olive oil½
  • cup torn mint leaves
  • 1 tsp minced red chilli
  • 1 tsp sugar

Method

  1. Finely slice the smoked chicken breast. Peel the cucumber if wished, cut in half and slice finely on the diagonal. Cut the nectarine into thin wedges. Toss together the smoked chicken, cucumber and nectarines with the dressing and cover. Leave for about 20 minutes for the flavours to infuse.
  2. Blanch the sugar snap or mangetout peas and refresh in cold water. Drain well and slice thinly.
  3. Toss the smoked chicken mix with the salad greens peas, spring onions, salad greens and cherry tomatoes and season with a good pinch of salt and pepper.

Dressing

  1. Mix all the ingredient together.

Cooks Tips

In place of a smoked chicken breast, use ½ smoked chicken and shred the meat. Keep the remaining chicken for another meal. In place of chicken, use sliced ham,
