Try marinating shredded smoked chicken in this sweet honey and wine based dressing for a delicious spring salad.
Ingredients
Dressing
- 1 cup white wine
- ¼ cup mild flavoured honey
- 2 stalks lemon grass chopped
- 2 red chillies, deseeded and sliced
- 2 tblsp each chopped coriander and basil
- ¼ cup chopped mint
- salt and pepper
Salad
- 1 whole smoked chicken
- ½ telegraph cucumber, halved and deseeded
- 1 mango, peeled and sliced
- 1 bunch asparagus, trimmed and blanched
- handful of snow pea sprouts (optional)
Method
- To make the dressing, combine the wine, honey, half the lemon grass and chilli into a saucepan and simmer together for 30 minutes until reduced by half. Strain, cool and mix in the remaining chilli and lemon grass, herbs and season with salt and pepper.
Salad
- Remove the skin from the chicken and shred the meat. Toss with the dressing and allow to marinate for 30 minutes.
- Slice the cucumber and toss with the mango slices, cold asparagus, marinated chicken and snow pea sprouts if using.
- Serve quickly after the final tossing.
Cooks Tips
- If you cannot obtain fresh mango, use canned. - Asparagus should weigh about 250-300 grams.
