Slow-roasted spiced tomatoes

Slow-roasted spiced tomatoes


  • 8 juicy medium-sized tomatoes
  • 50 grams butter
  • 1 teaspoon ground cumin or coriander
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon allspice


  1. Cut out the core of the tomatoes quite deeply.
  2. Mix together the butter, ground cumin or coriander, paprika, salt and allspice.
  3. Press equal amounts of the mixture into each tomato.
  4. Place tomatoes, butter-end upwards in a baking dish and spread any remaining butter on top.
  5. Bake at 160ºC for 1-1¼ hours until well cooked.
