I found this recipe in an old book called "Enquire Within Upon Everything" first published by Houlston and Sons 1886.
Ingredients
- 250 grama icing sugar
- 125 grams each tartaric acid and bi-carbonate soda
- 40 drops lemon essence (about 1 teaspoon)
Method
- (The original Recipe Method)
- All powders should be well dried, add teh essence to the sugar, then the other powders, stir all together and mix by passing twice through a hair sieve. Must be kept in tightly-corded bottles into which a damjp spoon must not be inserted. The sugar must be froung or very finely pulversized in a pestle and mortar. The powdered sugar sold for icing cakes will do.
Cooks Tips
I have converted the measurements to make it easier for the modern day cook.
