Sesame mushroom salad

Sesame mushroom salad


  • 2 cups fricalli pasta (or use penne)
  • 6 medium-sized flat mushrooms
  • 6 shiitake mushrooms
  • 2 cups rocket leaves
  • 2 tablespoons toasted sesame seeds


  • ΒΌ cup olive oil
  • 2 tablespoons Japanese soy sauce
  • 2 tablespoons mirin
  • 2 teaspoons grated fresh ginger
  • 2 teaspoons sugar
  • 1 teaspoon sesame oil


  1. Cook the pasta in plenty of boiling salted water until al dente. Drain, refresh in cold water and drain well.
  2. To make the dressing, stir together all of the ingredients.
  3. Slice the mushroom and place in a bowl with the prepared dressing. Toss well, cover and allow to marinade for 15 minutes.
  4. Add the pasta, rocket, sesame seeds. Season with salt and pepper.

Cooks Tips

- Do not allow the salad to sit too long before serving. Once dressed, the mushrooms will release more water, making the salad soggy.
