Seared Salmon With Sundried Tomato Aoili

A little bit of spice to this salmon salad.


  • 4 150 gram salmon fillets, skin on
  • 2 tsp paprika
  • 2 tsp flaky sea salt
  • 2 tblsp butter
  • 150 grams baby spinach
  • ½ red onion, peeled and finely sliced
  • 2 lemons, cut into wedges

Sundried tomato aoili

  • 1 cup sundried tomato mayonnaise
  • 1 tsp garlic, minced


  1. Rub the salmon fillets with paprika and sprinkle liberally with sea salt, set aside for 5 minutes.
  2. Melt the butter in a pan and add the salmon skin side down. Cook for 1-2 minutes each side.
  3. Pile the spinach in the centre of 4 plates and scatter with red onion. Top with a fillet of seared salmon and spoon over the sundried tomato aoili. Serve with lemon wedges and cracked pepper.

Sundried tomato aoili

  1. Mix the sundried tomato mayonnaise with the minced garlic.
