A little bit of spice to this salmon salad.
Ingredients
- 4 150 gram salmon fillets, skin on
- 2 tsp paprika
- 2 tsp flaky sea salt
- 2 tblsp butter
- 150 grams baby spinach
- ½ red onion, peeled and finely sliced
- 2 lemons, cut into wedges
Sundried tomato aoili
- 1 cup sundried tomato mayonnaise
- 1 tsp garlic, minced
Method
- Rub the salmon fillets with paprika and sprinkle liberally with sea salt, set aside for 5 minutes.
- Melt the butter in a pan and add the salmon skin side down. Cook for 1-2 minutes each side.
- Pile the spinach in the centre of 4 plates and scatter with red onion. Top with a fillet of seared salmon and spoon over the sundried tomato aoili. Serve with lemon wedges and cracked pepper.
Sundried tomato aoili
- Mix the sundried tomato mayonnaise with the minced garlic.
