Savoury Short Pastry

  • Makes 400 grams
Savoury Short Pastry


  • 2 cups flour
  • 125 grams well chilled butter
  • 1 egg beaten (see Cook’s Tip)
  • 3-4 tblsp cold water
  • 1 1/2 tsp salt


  1. Put the flour, salt and butter into a food processor and process until it forms crumbs.
  2. Add the egg and pulse to combine, pulsing in sufficient water to form small moist balls of dough.
  3. Turn out onto a floured board and bring together. Wrap in greaseproof paper or plastic wrap and refrigerate for 30 minutes before using.

Cooks Tips

You can use just water if you wish and omit the egg if wished.
