
Ingredients
- 1 onion, finely diced
- 2 teaspoons minced garlic
- 500 grams lean beef mince
- 440 gram can baked beans
- 1 tablespoon prepared mustard
- 1 carrot, grated
- 1-1½ cups diced cooked leftover vegetables
- 1 cup beef stock
- Cheese crumble
- ½ cup flour
- 50 grams butter, cold
- 1-1½ cups grated Cheddar-style cheese
Method
- Preheat the oven to 180ºC. Set the oven rack just above centre.
- Heat a dash of oil in a frying pan and cook the onion and garlic until soft. Set aside. Add the beef mince and brown well.
- Return the onion to the beef with the baked beans, mustard, vegetables and beef stock. Stir to mix, cover and cook for 10 minutes, stirring occasionally. Transfer to an ovenproof dish and scatter over the cheese crumble topping.
- Bake in the preheated oven for 20 minutes until the crumble is crispy and golden. Garnish with fresh herbs before serving.
- Cheese crumble
- Rub the flour and butter together until the mixture resembles crumbs. Stir in the cheese.
Cooks Tips
Meal stretcher tip - use 2 cans baked beans and try one with chilli for a flavour kick.
