Savoury lunch bake

Using up leftovers is essential when you live so far from fresh supplies, and Shirley often pools together whatever is at hand to make one of her famed savoury lunch bakes for the weekend, when more casual meals appear on the table.


  • 6 slices bread, buttered
  • 3-4 slices ham
  • 3-4 leftover cold, cooked sausages, sliced
  • 2 tomatoes, cut into wedges
  • 1 cup grated Cheddar-style cheese
  • 2-3 eggs
  • ½-1 cup milk


  1. Preheat the oven to 180ºC. Lightly grease a 23-cm round, ovenproof pie dish.
  2. Cut the bread slices diagonally in half. Place half the bread slices in the bottom of the prepared dish so they overlap. Layer the remaining slices with the ham, sausages and tomato and sprinkle the cheese on top.
  3. Beat the eggs and milk together and slowly pour over the ingredients - this will allow the bread to absorb the liquid.
  4. Bake in the preheated oven for 35-45 minutes until set and the bake is golden. Serve warm or cold.
