The simplest recipe for these moreish cheesy-biscuits uses equal quantities by weight of flour, butter and grated tasty Cheddar. Throw everything in the food processor for a very delicious nibble in minutes.
Ingredients
- 125 grams butter, chilled and diced
- 125 grams Cheddar or Edam cheese, grated
- 125 grams flour
- 1 teaspoon curry powder, optional
- toppings: sesame seeds, poppy seeds, finely chopped nuts of your choice
Method
- Preheat the oven to 200ºC. Line 1-2 trays with baking paper.
- Put the butter, cheese, flour and curry powder, if using, into a food processor and process until the mixture forms a stiff ball of dough.
- Turn out onto a lightly floured bench and roll the dough out to ½cm thickness.
- Cut into 4-5cm rounds or your preferred shapes.
- Place on the prepared trays and sprinkle with one of the selected toppings.
- Bake in the preheated oven for 12-15 minutes or until golden and crisp.
- Cool 1 minute before transferring carefully onto a cake rack to cool completely.
- Store in an airtight container. Freeze when cold, if wished.
