Salmon And Pea Frittatas

Ingredients

  • 1 cup baby frozen peas, defrosted
  • 200 grams cold smoked salmon, diced
  • 2 tblsp chervil or parsley, chopped
  • 8 eggs
  • 1 tsp mustard
  • 100 grams bocconcini cheese
  • sundried tomato mayonaise
  • ¾ cup mayonaise
  • 1-2 tablespoons sundried tomato paste

Method

  1. Preheat the oven to 180ºC. Grease and line 8 muffin tins with baking paper.
  2. In a clean bowl beat eggs with mustard. Add the peas, smoked salmon, chervil or parsley and season with salt and pepper.
  3. Pour the mixture into the prepared muffin tins. Place a slice of bocconcini on top of each muffin.
  4. Bake in the preheated oven for 20-25 minutes or until the frittatas are well-risen and just firm to touch.
  5. Serve with sundried tomato mayonaise.
