Salad Leaves With Pinenut And Currant Dressing

Make this dressing 1-2 days in advance, adding the toasted pinenuts just before serving. Great on salad leaves or over steamed summer greens.

Ingredients

  • ¾ cup oil, use olive, avocado or canola
  • ¼ cup white wine or cider vinegar or verjuice
  • ¼ cup currants
  • 1 tsp minced garlic
  • 1 tsp sugar or honey
  • seasoning of salt, pepper and mustard
  • ¼ cup toasted pinenuts

Method

  1. Mix together the olive or avocado oil with the vinegar, currants, garlic, sugar and seasonings. Add the toasted pinenuts before serving.
