Make this dressing 1-2 days in advance, adding the toasted pinenuts just before serving. Great on salad leaves or over steamed summer greens.
Ingredients
- ¾ cup oil, use olive, avocado or canola
- ¼ cup white wine or cider vinegar or verjuice
- ¼ cup currants
- 1 tsp minced garlic
- 1 tsp sugar or honey
- seasoning of salt, pepper and mustard
- ¼ cup toasted pinenuts
Method
- Mix together the olive or avocado oil with the vinegar, currants, garlic, sugar and seasonings. Add the toasted pinenuts before serving.
