Saffron And Spice Poached Dried Apricots

Plump Turkish apricots are best for this dessert. This can be made days in advance and served at room temperature. The Cardamom creamed rice, while decadent, is worth serving with these apricots. Diced dried nectarines could be used as an alternative.


  • 350 grams Turkish apricots
  • 3-4 vanilla pods, split
  • 6 whole cardamom pods or ½ tsp cardamom seeds
  • 2 pinches saffron threads
  • 375 ml bottle sweet white (dessert) wine
  • 1 cup water
  • 1 cup sugar (or use ½ sugar and have good flavoured honey)


  1. Put all the ingredients into a large saucepan and bring slowly to the boil, stirring occasionally to dissolve the sugar. Poach gently for 10 minutes. Turn off the heat and when cool, transfer to a serving dish. Serve at room temperature with the Orange Flower Water Butter Biscuits (see recipe on this website).
