Rump Mexican Marinade

Rump Mexican Marinade

Use this marinade to season beef.

Ingredients

  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 3 spring onions, finely chopped
  • 2 limes or lemons (grated rind and juice)
  • salt and pepper to season
  • 2 green chillies, deseeded and finely chopped
  • 1/2 cup tomato sauce

Method

  1. Mix all the ingredients together well. Spread over a thick piece or rump steak. Place in a non-metallic dish, cover and refrigerate overnight. BBQ or grill over a moderate to heat until cooked to ensure that the sugars do not burn.
