Rock Cakes

Rock Cakes

Ingredients

  • 2 cups flour
  • 1½ tsp baking power
  • ½ tsp ground nutmeg
  • ¾ cup sugar
  • 125 grams butter
  • grated orange rind of 1-2 oranges
  • 1 cup mixed dried fruit
  • 2 eggs
  • 2-4 tblsp orange juice

Method

  1. Sift the flour, baking powder, nutmeg and sugar into a bowl.
  2. Rub in the butter until the mixture resembles fine crumbs.
  3. Stir in the orange rind and dried fruit.
  4. Beat the eggs together and mix in to make a stiff dough, adding the orange juice if needed.
  5. Place tablespoonfuls of the mixture on to a greased baking tray.
  6. Bake at 180°C for 15 minutes.
