Ingredients
- 6 spinach tortillas
- 2x 200 gram pots of Baba Ganoush
- a selection of freshly roasted vegetables (roast pumpkin, parsnip, red onion, zucchini)
- 200 grams blue cheese
- 500 grams tabbouleh
Method
- Warm tortillas in microwave for approximately 10-20 seconds.
- Spread with babaganoush, then a layer of roasted vegetables on top.
- Cut the cheese into pieces and place on top of the vegetables with a spoonful of tabbouleh salad. Roll up securely to eat.
