
This simple fresh tomato sauce is not too sweet and, as it is prepared from roasted vegetables, it has a warm flavour.
Ingredients
- 4 large juicy tomatoes
- 1 red onion, peeled and sliced
- 3 whole garlic cloves, crushed and peeled
- ¼ cup oil, olive is nice here
- 1 tablespoon fresh rosemary or thyme leaves
Method
- Preheat the oven to 200ºC.
- Cut the tomatoes into quarters and toss with the onion, garlic, oil and herbs.
- Scatter evenly onto a baking dish.
- Bake in the preheated oven for 45 minutes.
- Puree all the ingredients in a food processor until smooth. Sieve to remove the seeds, if wished. Season with salt and pepper as required.
- Serve hot or just warm with toad-in the hole (see recipe on this website).
Cooks Tips
Variations: - Add ¼ cup of well-washed basil leaves when pureeing the vegetables. - Add 1-2 teaspoons of vinegar, malt is fine, to add a little sharpness. - Add 1-2 tablespoons of Worcestershire sauce when pureeing for a uniquely piquant flavour.
