This tasty lunch dish has a Mediterranean touch.
Ingredients
- 200 grams goat’s cheese
- 4 sun-dried or semi-dried tomato halves
- 4 basil leaves
- 4 slices prosciutto
- toasted ciabatta
- rocket leaves to accompany
Method
- Place a slice of prosciutto on a board. Top with a piece of goat's cheese, tomato and basil leaf. Wrap the prosciutto around and secure with a toothpick. Repeat with remaining ingredients.
- Brush lightly with olive oil and fan grill on a medium-high heat for 8-10 minutes until hot and crispy. Discard toothpicks.
- Serve immediately on toasted ciabatta with rocket leaves.
