This simple, elegant dessert is light and not too sweet. It is delicious served with a crisp, thin shortbread or chocolate-coated sponge finger biscuit or even a few biscotti on the side.
Ingredients
- 1/3 cup raisins
- 1 cup sweet dessert wine
- 3 tablespoons caster sugar
- 2½ cups fresh ricotta
- 1 teaspoon ground cinnamon
Method
- Soak the raisins in the dessert wine for 6 hours, then drain off any excess wine (use the wine in another recipe - it's too good to waste).
- Gently stir the raisins and sugar into the ricotta and shape into a mound on a serving platter. Finish with a fine sprinkle of cinnamon.
