Ricotta with raisins

Ricotta with raisins

This simple, elegant dessert is light and not too sweet. It is delicious served with a crisp, thin shortbread or chocolate-coated sponge finger biscuit or even a few biscotti on the side.


  • 1/3 cup raisins
  • 1 cup sweet dessert wine
  • 3 tablespoons caster sugar
  • 2½ cups fresh ricotta
  • 1 teaspoon ground cinnamon


  1. Soak the raisins in the dessert wine for 6 hours, then drain off any excess wine (use the wine in another recipe - it's too good to waste).
  2. Gently stir the raisins and sugar into the ricotta and shape into a mound on a serving platter. Finish with a fine sprinkle of cinnamon.
