Rich parmesan pastry

Rich parmesan pastry

Ingredients

  • 2 cups flour
  • ½ teaspoon salt
  • 200 grams butter, chilled and diced
  • ½ cup finely grated Parmesan
  • 1 egg yolk
  • 3-4 tablespoons chilled water

Method

  1. Sift the flour and salt into a bowl. Use your fingertips to rub in the butter until the mixture resembles coarse crumbs. Stir through the cheese and make a well in the centre.
  2. Mix the egg with 3 tablespoons of the water and pour into the well. Use a knife to cut the ingredients together, add the extra water if required.
  3. Turn out onto a floured bench, knead lightly to bring together. Wrap and refrigerate until required.
  4. Food processor method
  5. Puse the flour, salt, butter and Parmesan together until the mixture resembles crumbs. Pulse in the egg yolk and water until the mixture forms small, moist beads of dough. Turn out onto a floured bench, bring together, knead lightly and refrigerate before use.

Cooks Tips

- In place of Parmesan, use percorino or an aged Gouda
