Quick peach tart

This is so simple and delicious and it's so quick because it uses that emergency pack of cake mix hiding away in the back of the pantry.

Ingredients

  • ½ x 350 gram packet plain butter cake mix
  • ½ cup desiccated coconut
  • 75 grams butter, melted
  • 1 egg, beaten
  • grated rind of 1 orange
  • 2 tablespoons orange juice
  • peach cream filling
  • 410 gram can peaches, well drained
  • 250 gram pottle sour cream
  • 1 egg
  • 2 tablespoons orange juice

Method

  1. Preheat the oven to 180ºC. Grease and line a shallow-sided 20cm round cake tin.
  2. Stir together the cake mix, coconut, melted butter, egg, orange rind and juice to form a dough.
  3. Press into the prepared tin, bringing the mix up the sides of the tin.
  4. Arrange sliced peaches over the base.
  5. With a fork, beat together the sour cream, egg and orange juice and pour on top of the peaches.
  6. Bake in the preheated oven for 35-40 minutes or until the cake mix is golden around the edges and the filling set.
  7. Serve dusted with cinnamon and/or icing sugar.
