Quick fruit tarts


  • 1 slice pre-rolled puff pastry
  • ¼ cup mascarpone or spreadable cream cheese
  • 4 canned apricot halves with 2 tablespoons syrup
  • about ¼ cup chocolate chips or chopped chocolate
  • 2 tablespoons brown sugar
  • 1 tablespoon crystallised ginger


  1. Cut the puff pastry into 4x 10cm circles and place on a greased baking tray.
  2. Spread each circle evenly with the mascarpone or the cream cheese.
  3. Slice the apricots and arrange on top.
  4. Scatter the chocolate over the tarts. Sprinkle with the sugar.
  5. Bake at 220ºC for 12 minutes until the pastry is golden and well risen.
  6. Mix the crystallised ginger with the syrup and brush the top of the apricots before serving.
