Quick Beef Fajitas

Quick Beef Fajitas

By using lean minced beef, these fajitas can be prepared quickly and with plenty of flavour.

Ingredients

  • 500 grams minced beef
  • 1 tsp freshly ground black pepper
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1/2 tsp chilli powder
  • 1 tblsp minced fresh garlic
  • 300 gram can kidney beans, well drained
  • 2 large juicy tomatoes, blanched and diced
  • 2 tblsp tomato paste
  • 1/4 cup chopped fresh parsley
  • 6-8 flour tortillas

Salad Ingredients to Accompany

  • 4 spring onions, shredded
  • 2 peppers, cored, deseeded and sliced finely
  • 4-6 large lettuce leaves, sliced

Method

  1. Heat a non-stick frying pan and add the mince. Cook over a high heat, breaking up the mince with the back of a spoon until it is well-browned. This may be best done in two batches.
  2. Add the black pepper, cumin, coriander, chilli and garlic and cook a further 2 minutes until the spices all smell fragrant.
  3. Add the kidney beans and tomatoes and cook for 10 minutes. Stir in the chopped parsley and season with pepper if wished.
  4. In a bowl mix together the spring onions, peppers and lettuce.
  5. Take one tortilla and place an even-amount of lettuce down the centre. Top with the beef mixture and roll up to secure. Repeat with remaining tortillas. Serve the fajitas with the sour cream to accompany.
