By using lean minced beef, these fajitas can be prepared quickly and with plenty of flavour.
Ingredients
- 500 grams minced beef
- 1 tsp freshly ground black pepper
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1/2 tsp chilli powder
- 1 tblsp minced fresh garlic
- 300 gram can kidney beans, well drained
- 2 large juicy tomatoes, blanched and diced
- 2 tblsp tomato paste
- 1/4 cup chopped fresh parsley
- 6-8 flour tortillas
Salad Ingredients to Accompany
- 4 spring onions, shredded
- 2 peppers, cored, deseeded and sliced finely
- 4-6 large lettuce leaves, sliced
Method
- Heat a non-stick frying pan and add the mince. Cook over a high heat, breaking up the mince with the back of a spoon until it is well-browned. This may be best done in two batches.
- Add the black pepper, cumin, coriander, chilli and garlic and cook a further 2 minutes until the spices all smell fragrant.
- Add the kidney beans and tomatoes and cook for 10 minutes. Stir in the chopped parsley and season with pepper if wished.
- In a bowl mix together the spring onions, peppers and lettuce.
- Take one tortilla and place an even-amount of lettuce down the centre. Top with the beef mixture and roll up to secure. Repeat with remaining tortillas. Serve the fajitas with the sour cream to accompany.
