Quick and Easy Rogan Josh


  • 6 lamb shanks, trimmed
  • 1 large onion, peeled and diced
  • 1½ tablespoons minced garlic
  • 1 tablespoon minced fresh ginger
  • 1 600 gram bottle rogan josh cook-in sauce


  1. Preheat the oven to 160ºC. Cut 2-3 deep slashes into each lamb shank and brown well in a dash of oil in a lidded frying pan or heatproof casserole. Set aside.
  2. Cook the onion, garlic and ginger in any residual oil for 2-3 minutes or until fragrant. Stir in the rogan josh sauce. Return the lamb shanks to the pan and cover.
  3. Cook in the preheated oven for 1½ hours or until the meat is tender. Serve as is, or allow to cool for 2-3 hours before making into individual pies.

Cooks Tips

To make Rogan Josh potato pieces, prepare the classic or quick and easy recipe. Pull the meat from the shanks and return the meat to the sauce. Pile into a deep casserole or pie dish, top with mashed potato or kumara and bake at 180ºC for 20-30 minutes or until the potatoes are golden. Alternatively place the shanks into individual ovenproof pie dishes and cover each with an equal amount of sauce. Cover each dish with puff pastry and brush with milk to glaze. Bake at 220ºC for 30 minutes or until the pastry is golden, well risen and the filling is hot.
