These are wonderfully moist and if you do not have prunes use dates or raisins.
Ingredients
- 3 cups flour
- 2 tablespoons baking powder
- pinch salt
- ½ cup caster sugar
- 1 cup chopped moist prunes
- grated rind of 2 oranges
- 1 cup orange juice
- 1 cup cooked pumpkin, mashed
- 2 eggs
- ¾ cup milk
- 100 grams butter, melted and cooled
- icing sugar for dusting
Method
- Sift the flour, baking powder, salt and sugar into a large bowl and toss through the prunes. Make a well in the centre.
- In a jug, mix together the orange rind and juice, mashed pumpkin, eggs and milk. Stir into the dry ingredients and fold in the melted butter.
- Divide the mixture among 12-16 well-greased muffin tins.
- Bake at 220ºC for 20 minutes until the muffins are well-risen and golden. Dust with icing sugar to serve.
Cooks Tips
- The best pumpkin for this is a crwn or a grey pumpkin. It's a firm-fleshed pumpkin that when mashed will not be too moist.
