Pumpkin And Smoked Fish Bake

Ingredients

  • 200 grams large pasta shells
  • 400 grams prepared cheese sauce
  • ½ cup white wine
  • 3 cups soft mashed pumpkin
  • 2-3 tblsp chopped chives
  • 400-500 grams flaked smoked fish (such as trevally)
  • ½ cup cream
  • 1 egg, beaten
  • slices of cheese to garnish (such as mozzarella)

Method

  1. Par-cook large pasta shells in boiling salted water for 7-9 minutes until half cooked. Drain well.
  2. Mix prepared cheese sauce with wine and spread half into the base of a well-greased ovenproof dish.
  3. Mix together the pumpkin, chives, flaked smoked fish, cream and egg.
  4. Divide the mixture evenly among the par-cooked pasta shells. Spoon or drizzle the remaining cheese sauce on toop, then top each shell with a small slice of cheese.
  5. Bake at 180ºC for 25 minutes or until hot and golden. Serve with seasonal greens or salad and crusty bread rolls.

Cooks Tips

If you don't have any large pasta shells, use cannelloni tubes instead. Spoon the mixture into the tubes and bake until cooked through.
