Prosciutto wrapped Chicken Tenderloin Skewers

Prosciutto wrapped Chicken Tenderloin Skewers


  • 500 grams chicken tenderloins
  • ¼ cup olive oil
  • 2-3 tblsp finely chopped celery leaves or parsley
  • 1 tblsp finely chopped fresh thyme
  • ½ tsp each salt and freshly ground black pepper
  • 100 gram finely sliced prosciutto

To Accompany

  • extra virgin olive oil
  • balsamic vinegar
  • ½ tomato deseeded and finely diced


  1. Place the chicken tenderloins, olive oil, celery leaves, thyme, salt and pepper into a bowl. Cover and allow to marinate at room temperature for 30 minutes.
  2. Loosely wrap a slice of prosciutto around one, chicken tenderloin. Secure with a small skewer. Repeat with remaining ingredients.
  3. Cook in a hot non-stick frying pan for about 6-8 minutes turning occasionally until well browned and cooked.
  4. Serve drizzled with olive oil and balsamic vinegar and deseeded tomato.
