
This refreshing salad is ideal to enliven the tastebuds.
Ingredients
- 300 grams shelled green prawns
- ½ rockmelon and watermelon peeled, deseeded
- 2 cos lettuces
- ½ large cucumber
- ½ cup honey roasted peanuts
- ¼ cup mint leaves
Chilli Dressing
- grated rind and juice two limes
- 1 chilli, deseeded and finely diced
- 2 tblsp chopped fresh coriander
- 2 tblsp chopped fresh mint
- 1 tblsp sugar
- 4 tblsp olive oil
- 2 tsp fish sauce
Method
- Cook the prawns in a dash of olive oil over a moderate heat, turning regularly until they turn pink. Cool.
- Cut or ball the melons into even 2cm sized pieces. Dice the cucumber and roughly chop the mint leaves.
- In a bowl toss together the prawns, melons, cucumber, peanuts and mint leaves with the Chilli Dressing.
- Tear the cos lettuces into pieces or chop roughly and place on 4 serving plates. Top with the Prawn Salad and serve.
Chilli Dressing
- Place all the ingredients in a lidded jar and shake well to combine.
Cooks Tips
- Instead of cos lettuce, use iceberg lettuce cut into chunks.
