Prawn And Proscuitto Stir Fry

When pan-fried, prosciutto's salty flavour and crispy texture make a wonderful addition to this easy-to-prepare prawn stir-fry that's loaded with egg noodles and choy sum.

Ingredients

  • 100 grams thin egg noodles
  • 4 tablespoons oil
  • 8 spring onion, trimmed and sliced
  • 2 tsp minced fresh garlic
  • 2 tsp minced fresh ginger
  • 1 green chilli, sliced
  • 350 grams shelled green prawns
  • 250 grams mushrooms, sliced (use button or shiitake)
  • 250-350 grams choy sum, washed
  • ΒΌ cup finely chopped fresh coriander
  • 2 tbsp dark soy sauce
  • 2 tbsp sherry
  • 6 slices prosciutto, pan-fried until crisp

Method

  1. Cook the egg noodles in boiling salted water until tender. Drain and keep warm.
  2. Heat half the oil in a wok or large frying pan and cook the spring onion, garlic, ginger and chilli until just fragrant. Set aside.
  3. Add half the remaining oil to the pan and add the prawns and mushrooms and toss until cooked. Set aside with the onion.
  4. Trim the coarse stems of the choy sum and slice if wished. Add the remaining oil to the pan and quickly toss the choy sum and noodles. Once hot, return the spring onion and prawn mixtures to the pan. Season with the coriander, soy sauce, sherry, salt and pepper.
  5. Serve in bowl or on plates with the crispy pan-fried prosciutto on top.
