Lemon infused olive oil from Colonna of Italy greatly compliments the seafood and cheese in this pizza. This was my favourite pizza when I tested these ideas up. If you are unable to get any of the lemon scented olive oil add the grated rind of one lemon to the onions when cooking.
Ingredients
- 2 large pre-made pizza bases
- little oil
- 4-5 tblsp favourite pasta or pizza-style tomato sauce
- 200 grams fresh mozzarella cheese, sliced
- 12 shelled green prawns
- capers to garnish
- fresh basil leaves to garnish
- lemon-infused olive oil to serve with
Method
- Spread the edges of the pizza bases with oil.
- Spread each pizza with a light cover of tomato sauce.
- Scatter the cheese slices and prawns over the top.
- Fan bake at 220°C for 12 minutes or until the prawns are cooked and the cheese beginning to colour.
- Garnish with capers, basil leaves and lemon-infused oil.
