Prawn and mozzarella pizza

Lemon infused olive oil from Colonna of Italy greatly compliments the seafood and cheese in this pizza. This was my favourite pizza when I tested these ideas up. If you are unable to get any of the lemon scented olive oil add the grated rind of one lemon to the onions when cooking.


  • 2 large pre-made pizza bases
  • little oil
  • 4-5 tblsp favourite pasta or pizza-style tomato sauce
  • 200 grams fresh mozzarella cheese, sliced
  • 12 shelled green prawns
  • capers to garnish
  • fresh basil leaves to garnish
  • lemon-infused olive oil to serve with


  1. Spread the edges of the pizza bases with oil.
  2. Spread each pizza with a light cover of tomato sauce.
  3. Scatter the cheese slices and prawns over the top.
  4. Fan bake at 220°C for 12 minutes or until the prawns are cooked and the cheese beginning to colour.
  5. Garnish with capers, basil leaves and lemon-infused oil.
