Prawn And Avocado Salad With Avocado Oil Dressing


  • 1 kg shelled prawns
  • 2-3 Tbsp butter or oil
  • salt and pepper to season
  • 4 avocados
  • 1 small rockmelon, halved and deseeded
  • 1 small honey dew melon, halved and deseeded
  • 4 small cos lettuces

Avocado Oil Dressing

  • grated rind and juice 3 limes
  • 1 Tbsp minced fresh ginger
  • 2 Tbsp honey, manuka is nice here
  • 4-6 Tbsp avocado oil
  • 2 Tbsp chopped fresh ginger
  • salt and pepper to season


  1. Cook the shelled prawns in hot butter and oil in a frying pan until just cooked. Season with salt and pepper. Cool.
  2. Halve, stone and peel the avocadoes and slice thickly. Cut the melons into thick pieces. Cut the cos lettuce into thick slices.
  3. Arrange the prawns, avocado slices, melon pieces and cos lettuce in a bowl and pour over the dressing just before serving.

Avocado Oil Dressing

  1. Put all the ingredients into a screw top jar and shake to combine. Season well with salt and pepper. Makes 1½ cups.
