Potato Pancakes With Spiced Apple Sauce

Wonderfully light and just perfect for a weekend breakfast or brunch. These are nice served with manuka or rewarewa honey in place of golden or maple syrup for a change.

Ingredients

  • about 700 grams floury potatoes
  • 4 eggs
  • 6 tblsp cream
  • ΒΌ cup flour
  • salt and pepper
  • butter for pan-frying

Spiced Apple Sauce

  • 4 cooking apples
  • 1/4 cup water
  • 1/4 cup honey
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 2 tblsp raisins
  • honey to accompany

Method

  1. Peel potatoes and cook in boiling, salted water until tender. Drain and mash. Set aside.
  2. Combine 2 cups of the mashed potato with 2 whole eggs and 2 egg yolks, the cream and flour, and season with salt and pepper.
  3. Whisk the remaining 2 egg whites until stiff then carefully fold into the potato mixture with a metal, slotted spoon.
  4. Heat a little clarified butter in a heavy-based frying pan. Cook tablespoonfuls of potato batter until golden, turning once.
  5. Serve with Spiced Apple Sauce and rashers of crispy bacon, drizzled with honey.

Spiced Apple Sauce

  1. Peel, core and slice apples, combine with water, honey, cinnamon, cloves and raisins. Simmer gently until the apples are tender and just starting to break up. Serve warm.
