Ingredients
- 2 tblsp oil
- 500 grams New Zealand Trim pork casserole pieces
- 2 cups sliced onions
- 2 cups diced mushrooms
- 1 tsp turmeric
- 1/2 tsp each ground cinnamon and cardamom
- 3 cloves garlic, peeled and sliced
- 2 tblsp flour
- 2 cups chicken stock
- 12 dried apricots, halved
- rice to serve
Method
- Heat the oil in a frying pan and brown the pork quickly on all sides. Set aside.? Add the onions and mushrooms to the pan and cook for 5 minutes stirring regularly.
- Add the garlic, turmeric, cinnamon and cardamom and flour and cook 1 minute.? Return the pork to the pan with the stock and apricots and bring to the boil.
- Transfer to a casserole and cook at 180°C for about 1 hour or until the pork is tender.? Serve with rice.
