Pork And Apricot Morrocan Casserole

Ingredients

  • 2 tblsp oil
  • 500 grams New Zealand Trim pork casserole pieces
  • 2 cups sliced onions
  • 2 cups diced mushrooms
  • 1 tsp turmeric
  • 1/2 tsp each ground cinnamon and cardamom
  • 3 cloves garlic, peeled and sliced
  • 2 tblsp flour
  • 2 cups chicken stock
  • 12 dried apricots, halved
  • rice to serve

Method

  1. Heat the oil in a frying pan and brown the pork quickly on all sides. Set aside.? Add the onions and mushrooms to the pan and cook for 5 minutes stirring regularly.
  2. Add the garlic, turmeric, cinnamon and cardamom and flour and cook 1 minute.? Return the pork to the pan with the stock and apricots and bring to the boil.
  3. Transfer to a casserole and cook at 180°C for about 1 hour or until the pork is tender.? Serve with rice.
