Ingredients
- 500 grams beef mince
- ½ cup uncooked long grain rice
- 2-3 tablespoons chopped fresh herbs, like thyme, parsley, chive or a mix
- 1 onion, peeled and finely sliced
- 125 grams mushrooms, sliced (optional)
- 1550 gram can or casserole-style sauce
- 1½ cups water
Method
- In a bowl mix together the beef mince, rice and herbs and season with salt and pepper. Roll into 12 even shaped balls.
- Heat a little oil in a frying pan and cook the onion for 7-8 minutes until just beginning to brown. Set aside.
- Add a dash more oil to the pan and add the meatballs and brown on all sides. Return the onion to the pan with the mushrooms (if using), casserole-style sauce and water. Stir to mix evenly then cover.
- Simmer very gently over a low heat for 30 minutes turning occasionally until the rice is tender. Serve with seasonal vegetables.
Cooks Tips
- If you do not have fresh herbs, use 1-2 tablespoons dried herbs. - Orzo pasta can be substituted for the rice.
