This recipe is fabulous served with Orange Coconut Biscuits.
Ingredients
- 3 cups water
- 1 cup white wine
- 2 cups sugar
- 1 vanilla bean or ΒΌ teaspoon vanilla essence
- 3-4 strips orange rind
- 2-3 whole cloves
- 12 apricots
Method
- Put the water, wine and sugar into a saucepan. Stir until all of the sugar has dissolved.
- Add the vanilla bean or essence, orange rind and cloves. Simmer for 10 minutes.
- Add the apricots and poach unti lthe apricots are firm and tender (about 10-15 minutes). Remove from the heat and allow apricots to cool in the syrup. (Be careful not to boil the fruit - they will turn to mush).
- Remove apricots from the syrup and peel. Boil the syrup until reduced in quantity by half. Cool.
- Serve apricots in small bowls accompanied with the Orange Coconut Biscuits (see recipe on our website)
