Pizza muffins

Pizza muffins

All the flavours of your favoutie pizza encased in a tender muffin. Serve warm with a glass of wine.

Ingredients

  • 2 cups self-raising flour
  • ½ teaspoon baking powder
  • 1¼ cups grated Cheddar-style cheese
  • ½ cup milk
  • ½ cup plain unsweetened yoghurt
  • ¼ cup tomato paste (sundried or plain)
  • 1 egg
  • ¼ cup oil or melted butter
  • 2 tablespoons diced black olives
  • 2 tablespoons finely diced sundried tomatoes
  • 2 tablespoons finely chopped fresh parsely or celery leaves
  • ¼ cup finely sliced salami

Method

  1. Preheat the oven to 200ºC. Grease 12 standard muffin tins or line with paper cases.
  2. In a large bowl, sift together the flour, baking powder and a pinch of salt and pepper. Stir in one cup of the cheese.
  3. In a separate bowl, mix together the milk, yoghurt, tomato paste, egg, oil or melted butter, olives, sundried tomatoe and parsley or celery leaves. Pour into the dry ingredients and using a slotted spoon, mix together gently with the salami.
  4. Divide evenly among the prepared tins and top each muffin with a little of the remaining grated cheese.
  5. Bake in the preheated oven for 18-20 minutes until godlen and cooked. Cool 1-2 minutes before serving.
