
All the flavours of your favoutie pizza encased in a tender muffin. Serve warm with a glass of wine.
Ingredients
- 2 cups self-raising flour
- ½ teaspoon baking powder
- 1¼ cups grated Cheddar-style cheese
- ½ cup milk
- ½ cup plain unsweetened yoghurt
- ¼ cup tomato paste (sundried or plain)
- 1 egg
- ¼ cup oil or melted butter
- 2 tablespoons diced black olives
- 2 tablespoons finely diced sundried tomatoes
- 2 tablespoons finely chopped fresh parsely or celery leaves
- ¼ cup finely sliced salami
Method
- Preheat the oven to 200ºC. Grease 12 standard muffin tins or line with paper cases.
- In a large bowl, sift together the flour, baking powder and a pinch of salt and pepper. Stir in one cup of the cheese.
- In a separate bowl, mix together the milk, yoghurt, tomato paste, egg, oil or melted butter, olives, sundried tomatoe and parsley or celery leaves. Pour into the dry ingredients and using a slotted spoon, mix together gently with the salami.
- Divide evenly among the prepared tins and top each muffin with a little of the remaining grated cheese.
- Bake in the preheated oven for 18-20 minutes until godlen and cooked. Cool 1-2 minutes before serving.
