Looking for something to jazz up the lunch box or weekend picnic
Ingredients
Pita Pockets - Suggested fillings
- hummus – any flavour
- luncheon sausage
- gherkins
- sliced tomatoes
- lettuce
- deli-serve coleslaw
- another favourite salad
Persian Naan bread
- Persian Naan bread
- hummus or mayonnaise
- Deli-serve curried rice salad or another favourite salad
- canned peaches
- deli-serve ham
- semi-dried tomatoes
Method
Pita Pockets
- Cut a small slice off the top of the pita pocket and carefully open up. Fill with any of the above fillings, making sure you add lots of hummus ? its healthy and makes a great base. For a lunch box, wrap in plastic wrap to keep fresh.
Persian Naan Bread Wraps
- Carefully separate the Persian Naan bread. I often find this easier if you place a damp clean tea towel on top if they are sticking. Spread liberally with hummus or mayonnaise and then layer with any number of the listed goodies, leaving a 2cm border at two opposite edges.??
- Take this filling free edge and roll up tightly to secure the filling. Secure with toothpicks if wished and enclose in plastic wrap to keep fresh.
