Pistachio Nut Chocolate Biscotti

Pistachio Nut Chocolate Biscotti

Try these with a coffee at the end of a meal.


  • 150 grams unsalted butter
  • 1 cup castor sugar
  • 3 eggs
  • 2 1/4 cups self raising flour
  • 1/2 cup cocoa
  • 3/4 - 1 cup pistachio nuts (unsalted)
  • 1/4 tsp salt


  1. Beat the butter and sugar until light. Beat in the eggs well.
  2. Sift together the flour, cocoa and salt and stir into the creamed mixture with the pistachio nuts.
  3. On a floured board make sausage like rolls of dough about 3cm in diameter and the length of the baking tray. Place on a greased baking tray about 5cm apart.
  4. Bake at 160ÂșC for 25 minutes. Cool for 10 minutes then slice into 1cm slices.
  5. Place the slices in a single layer back on the tray and bake a further 8-10 minutes, turning once. Cool on a cake rack and keep in an airtight container.
