Try these with a coffee at the end of a meal.
Ingredients
- 150 grams unsalted butter
- 1 cup castor sugar
- 3 eggs
- 2 1/4 cups self raising flour
- 1/2 cup cocoa
- 3/4 - 1 cup pistachio nuts (unsalted)
- 1/4 tsp salt
Method
- Beat the butter and sugar until light. Beat in the eggs well.
- Sift together the flour, cocoa and salt and stir into the creamed mixture with the pistachio nuts.
- On a floured board make sausage like rolls of dough about 3cm in diameter and the length of the baking tray. Place on a greased baking tray about 5cm apart.
- Bake at 160ÂșC for 25 minutes. Cool for 10 minutes then slice into 1cm slices.
- Place the slices in a single layer back on the tray and bake a further 8-10 minutes, turning once. Cool on a cake rack and keep in an airtight container.
